Learn about the wonderful role Casanova played in chocolate history; how it was consumed in 17th century high society; why Napoleon indirectly helped Italians invent the country’s favorite and best-selling candy; why Nutella was created after WW II, and much more…

Discover the important contributions Italy has made and continues to make to chocolate cuisine. For example, few realize that Italy, not Mexico, was the first country to cook with chocolate back in the 1700s. Learn about those early sweet and also savory dishes as well as modern-day Italian chocolate recipes. Discover the amazingly complex chocolate-making process, from harvesting the cacao beans to how it becomes a chocolate bar.

Led by Francine Segan, a food historian and expert on Italy, this interactive seminar will explore all the best Italy has to offer for the chocolate lover. Designed to inform curiosity as well as future travels, participants will come away with an increased understanding of the important role Italy plays in chocolate history.

Francine Segan is a renowned food historian and James Beard-nominated author of six books. She is a regular on TV, appearing frequently on the Food Network, PBS, Discovery, and History Channels. Francine's articles have appeared in Saveur, Epicurious, Vogue, and Fine Cooking Magazine and she is an often-featured expert in newspapers including the Wall St Journal, USA Today, and The New York Times. She lectures across the USA at such prestigious venues as the Institute for Advanced Study at Princeton University, Smithsonian Museum in DC, Virginia Fine Arts Museum, and 92nd St Y, NYC's premiere cultural center.
