The best thing to do when you have lots of lemons is to make Limoncello and Granita! In this interactive cooking class, you will learn how to make delicious Limoncello and one of the most ancient frozen desserts, Lemon Granita.

In Italy, ordering a Limoncello is a hit or miss affair, sometimes it’s an incredible taste sensation, and other times it seems like a sticky sugar syrup with lemon flavoring. To make delicious Limoncello you need time and patience, so in this class, we will look in detail at all the steps necessary to make your own Limoncello. We will also discuss how to adjust and adapt Limoncello recipes to suit your own tastes.

Granita is one of the oldest frozen recipes that we know of: the Greeks were making it using ice from Mount Etna in Sicily over 2000 years ago! In this class, we will use one of the oldest (and fastest) methods to make this refreshing frozen dessert, it just requires a little science and a little elbow grease. We will also discuss other tried-and-tested methods for making granita that require more time (but less of a work-out!)

Led by chef, culinary instructor, and expert on traditional Sicilian cuisine, Michael Sampson, this interactive lesson will show you how to make perfect Limoncello and traditional Lemon Granita. Designed to inform curiosity as well as future travels, participants will come away with an increased understanding of Italian cuisine and history and all the tricks and tips necessary to make these recipes at home.

You are invited to watch and discuss or to cook along with this interactive class.

Below are the items you’ll want to participate in this class. We will email attendees the full recipe with measurements and instructions prior to the class so that you can pre-measure ingredients before joining.

Ingredients for Limoncello:

  • Some organic lemons (freshly picked are best)
  • 95% Alcohol (190 proof), such as Everclear
  • Sugar
  • Water

Ingredients for Granita:

  • Organic Lemons
  • Water
  • Sugar
  • Crushed Ice

Special Equipment:

We don’t list every item you’ll need here (e.g., standard items like knives, bowls, cutting boards). But we do our best to identify items that may not be in every kitchen, and alternatives where possible

  • A large glass jar
  • 2 metal bowls, Ideally 1 that fits easily in the other

Michael Sampson trained as a chef at ALMA school of Italian cuisine in the north of Italy and has been living and working in Sicily for the last 12 years. Michael has worked at the Gambero Rosso cookery school in Palermo, was head chef and teacher at the Anna Tasca Lanza cookery school in central Sicily, and for the last 3 years has been running The Sicilian Pantry cookery school in Palermo’s historical centre where he teaches daily cooking lessons covering many traditional Sicilian dishes with guests from all over the world.

Informative class and great fun!

This Limoncello and Granita class with chef Michael was great, I learnt a lot about the use of lemons and citrus fruits, about Sicilian history, about digestifs and sorbets! The class was great fun. Excellent quality of video too! Bravo Michael

Another terrific cookery class from Michael Sampson. His mastery of culinary technique and his broad knowledge of ingredients native to and important in SIcilian cooking traditions make his Conversations a pleasure chock-full of learning and good tastes. He's also very adept at teaching via Zoom, using the camera for close-ups of what he's doing and keeping track in real time of questions asked in the chat. Much appreciated.

Fun and informative

This was such a great class! The host was charming and funny. The video was lovely, especially with the lemons and oranges against the blue and white pottery. And most importantly, the class was very informative. I want to take a cooking class with him now...
