Explore the profound and intriguing world of sake – Japan's national and sacred drink. Learn what makes it both unique and tasty as well as discovering the history, philosophy, art of making, different types, and how to best enjoy it.

Sake is not just about hot sake -- in fact in Japan premium sake is never heated. We will discuss the historical and geographical context that makes sake the national drink of Japan and the very intricate and unique making process of sake. It is said that sake has a much more complex making process than wine or beer. There are lots of beautiful arts in the hands of sake making artisans.

For guests to better enjoy sake at restaurants and home, we will look at different types of sake defined by the different making processes, which temperature to best enjoy each type of sake, and what kind of sake wear to visually enjoy each type. We will also cover drinking manners forsake.

Led by a passionate sake lover and enthusiastic home cook, Kana Hattori, this interactive seminar will provide an in-depth look at sake proudly produced in Japan. Designed to inform curiosity as well as future travels, participants will come away with an increased understanding and appreciation of sake, its beautiful art in the making process, and tips to choose good sake.

Kana is a qualified tea master of Urasenke Tea Ceremony School and is an experienced national-licensed guide. She holds a BA in English from Doshisha University, Kyoto, and another BA in Japanese Classical and Traditional Arts from Kyoto University of Arts and Design. She enjoys playing the shamisen, a 3-stringed traditional music instrument that geisha ladies also play, and also performing Noh, 650-year-old Japanese classical theater. The Zen philosophy—to live in the moment—has always been a core tenet of her life.

Sake basics

I thought the class was wonderful! Knew nothing about sake and the teacher gave a terrific beginner's jumping off to the world of sake. The content was clear and well thought out.

Kana Hattori on Sake

I never knew there was so much to learn about sake. Kana Hattori, in her typical pleasant style, explained everything you need to know about the history of sake, the making of sake, the categories of sake, the different qualities of sake, and the proper way to serve and drink sake. When I am in a Japanese restaurant, now I will be much more educated when I look at the list of available sakes.
