A good cup of chai can uplift almost anyone’s day. But what is the origin of chai and how can we make the perfect cup? Join a Kolkata Chai Co, a family-run business run by two Indian-American brothers in NYC to find out more about this delicious drink.

In this interactive seminar, we’ll explore the origins of tea and chai. We’ll learn how the spice trade affected the tea trade and how tea has evolved in mainstream culture. We’ll also look at what chai really is as we explore the specifics of masala chai and South Asian tea preparation through a discussion of ingredients, variations, and personal stories.

During our time together we will learn how to prepare the perfect cup as we are introduced to the fundamentals, including a step-by-step process into making a cup of chai from start to finish. We’ll also spend time discussing how and when chai became ""chai tea"" in the Western world. Kolkata Chai aims to reclaim our narrative by focusing on traditional ingredients and preparation for a real cup of chai.

As we finish our time together, we’ll learn of the health and immunity benefits, how to responsibly shop for tea and what to look for when doing so. Led by Ayan and Ani Sanyal of Kolkata Chai Co, this interactive seminar will introduce participants to the history, origins, and appropriation of chai as well as with a proper education about how to make the perfect cup.

Kolkata Chai Co was started by brothers Ayan and Ani Sanyal with a simple idea: How do we extend the authenticity, respect and tradition behind a cup of masala chai to NYC? For years, chai has been bastardized and appropriated in the U.S., and it was time to bring respect, tradition and authenticity back to one of the world's most cherished drinks. Inspired by summers spent in Kolkata exploring bazaars and street food stalls, the brothers opened their first cafe/restaurant in NYC's East Village in the fall of 2019 to critical acclaim from Eater, Food & Wine Magazine, Good Morning America, and other prominent outlets. The menu features Bengali street food staples such as masala chai and bhel puri in addition to modern twists including their famous non-dairy oat milk masala chai and chai caramel ice cream. Kolkata Chai hopes to inspire others to unlock the richness of their own cultures and tradition over a cup of steaming hot masala chai.
